Pav Bhaji

Ingredients:Potatoes – 4 big
Mixed vegetables – Peas, Carrot, Cauliflower, Green Beans, Corn Kernels
Tomatoes – 3 big
Onions – 2
Turmeric Powder – ½ tsp
Salt and sugar – to taste
Red Chilli powder – 1 ½ tsp
Butter – 2 tblsp
MDH Pav Baji Masala powder – 1 ½ tsp
Grind together:Green chillies – 5
Ginger – ½ inch piece
Garlic – 6 flakes
Method:· Pressure-cook the vegetables. I usually cook it in two tiers, top with mixed vegetables and the bottom with the potatoes.
· Peel the cooked potatoes and mash.
· Melt butter in a shallow pan. Add onion and fry.
· When it is golden brown add ground masala and fry.
· Mix finely chopped tomatoes and fry till it is mushy.
· Add mashed potatoes and cooked vegetables.
· Stir in salt, Chilli powder, turmeric powder, Masala powder and little sugar.
· Pour just enough water to make it into a thick gravy.
· Take two ladles and mash the vegetables with them thoroughly when it is boiling.
· When the gravy becomes thick, serve hot with lime, cut coriander/cilantro and finely cut onions.
To serve:
Cut bun/Pav horizontally into half. Apply butter and heat on tawa/griddle, put little Pav baji masala inside and serve with little more masala on the side.
