Eggless Banana walnut Bread/Muffin

I always like to have my midday snack during my morning break. Banana bread is one of my favorite midday snacks. I like its moist texture. Recently I felt like making it at home, first couple of attempt was a flop. One of my colleagues at school gave me a list of ingredients of the recipe which was passed on by her friend. So got out my cook books and went online… and put together and finally got a recipe to my satisfaction. It is as follows… try it, enjoy it and let me know what you think…

As you can see the ingredients used like whole wheat flour, olive oil, banana and walnuts are helpful in reducing cholesterol level. I guess we can use sugar substitute to make it healthier. I have not tried it yet…., if you do, please let me know the result.
Ingredients:
2 cups whole wheat flour
3 ½ banana
1 cup sugar
1/3 cup oil (I used Olive oil)
2 tsp baking powder
1 tsp baking soda
Vanilla essence or extract ½ tsp (Even almond essence will do)
1 fist walnuts
Method:
1. Sieve the flour, baking powder and baking soda. Keep aside.
2. Roast walnuts on a skillet or heat it in Microwave oven for 2 minute.
3. Rub the walnuts in between your palm to make it into small pieces. Blow gently over it so that lose skin of the walnut can be discarded. Mind to do this over a sink or will end swiping the entire kitchen. Keep it aside.
4. Blend banana, oil and sugar till smooth and creamy.
5. Add flour slowly while the blender is still running.
6. The dough should have a smooth consistency. If it too dry - add little milk; or apple sauce or my favorite orange juice to get the right consistency.
7. Add vanilla extract to the mixture. (Even Almond extract/essence can be used)
8. Stir in roasted walnuts pieces to the mixture,
9. Pour it into a coated baking dish ….bread-pan or muffin-pan
10. Bake in preheated 350°f ..for either 45min or 1 hr depending on oven….. until when a toothpick inserted in the center comes out clean.
