Virmicelli is know as Shavige in Kannada and Semiya in Hindi. And Uppittu in Karnataka
and Upma in North-India for savory seasoned dish usually prepared for
breakfast and also packed for lunch-box. Upma can be made with different base
ingredients. All tasty wholesome healthy breakfast. Refer to the list
below. Vermicelli upma is mostly prepared in South part of India.
Other Upma Variety: Rava upma, Sago upma, Bread upma, Avalakki upma, Shavige upma, String Hopper (Indian Rice Noodles) Upma, Millet (Siridhania) upma, Wheat/Godi kadi upma, Oats
upma, Quinoa upma, Buckwheat upma, Amarnath seeds upma the list goes on.
If you end up with some leftover Vermicelli Upma, and family makes a face looking the leftover dish, no worries, you can make
Vermicelli Pakoda or
Vermicelli cutlet. It's fun and yummy.
Ingredients:
- 2 cups - Vermicelli - broken ( I used MTR brand vermicelli here)
- 1 cup - Chopped Onion
- 1 cup - Vegetables (like peas, carrots and string beans)
- 1 - green chili (or as per taste)
- 1 tsp - Urad dal | Black gram
- 1 tsp - Chana dal | Bengal gram
- 2 tsp - Sugar
- ½ tsp - mustard seeds
- 2 tbsp. - oil or ghee
- 7 to 8 - curry leaves
- 7 to 8 - Cashew nuts [optional]
- ½ cup - grated coconut [optional]
- 6 cups - water or add as required
- salt - as required
- coriander leaves (cilantro) for garnishing
Preparation:

Soak Urad dal and Chana dal for about 20 minutes, drain and set aside.

With ½ tsp of ghee or oil, stir and roast vermicelli on a medium-low flame
until Golden in color. Transfer to another bowl and set aside.
- Finely cut onions and green chilies
- Cut beans and carrots.
- Finely chop fresh coriander/cilantro leaves
- Separate curry leaves from its stem
Method:
- Making Vermicelli Upma, heat oil or ghee in a pan.
- Add the mustard seeds and once it starts to sputter, add soaked urad dal and chana dal. If you plan on using Cashew nuts, add them now. Fry them till they are slightly browned.
- Next add curry leaves and green chill.
- Stir for 30 seconds, then add chopped onions and ½ tsp of Sugar.
- Sauté till the onions become translucent.
- Mix-in the cut veggies.

Now add water, salt and sugar. Mix and cover.
- Let the mixture come to a rolling boil on a medium flame.
- Once it starts to boil, add the roasted vermicelli. Mix the vermicelli well
- Lower the flame, cover the pan and cook the vermicelli till they become soft and all the water is
absorbed.

Once the vermicelli is cooked completely, mix-in grated coconut and 1½ tsp of sugar.
- Switch off the flame.

Serve hot of warm vermicelli upma garnished with a few coriander leaves along.
Notes:
- Cashew nuts are optional to use. When you have guests, adding cashew will make upma special.
- Grated coconut is also optional, its a Mangalorean thing, we add coconut for everything. Anyway, it does give sweet nutty flavor to your dish.

Kanda Batata Poha - Seasoned Beaten Rice with Potato

Kanda Poha is a common dish from the heart of Maharashtra. I got this recipe
from one of my Maharashtrian friend. My friend told me a funny fact, that when boys
family visit potential girl's house (arranged marriage), the boys family
looks for how well the girl can make Kanda Poha. I am not sure how
true is the fact, but I am sure she was trying to emphasis how important this
dish is.
Ingredients:
- 2 cup - Poha (Flattened rice)(150 grams)
- 2 - Potatoes, peeled and diced
- 1 - Green Chilli (finely chopped) (or as per taste)
- ½ cup - Peanuts
- 2 tsp - Fresh Lemon Juice (or as per taste)
- 8 to10 - Curry Leaves
- 1½ tsp - Sugar
- ¼ tsp - Turmeric Powder
- ½ tsp - Black Mustard seeds
- ¼ tsp - Cumin seeds
- ¾ tsp - Salt (or as per taste)
- 1 - 2 tbsp. - Oil
- ¼ cup - Fresh Coriander/cilantro Leaves (finely chopped)
- Besan Sev for garnish
Prep:
-
Poha: Clean the poha of husks and other impurities; To wash it,
pour the poha it in a bowl of cold water, immerse it completely
and drain it out immediately. You may use a strainer to
drain the water out; Gently spread out the poha with a help of a
spoon. Gently mix-in ¾ teaspoon of salt and 1½ tsp of sugar.
Keep the poha aside for about 15 minutes for it to soften. If it
is too dry, sprinkle bit of water for it soak and swell.

Peanuts: Heat a pan. Put 1tsp of oil in it. When the oil is hot,
add peanuts and roast until the color changes and skin starts to
come off. Transfer the peanuts onto a kitchen towel. Fold over the
towel, rub the peanuts in remove the skin. Discard the skin. Keep
the roasted peanuts aside.
Removing the peanut skin is optional step.

Potatoes: Peal the skin and cut potatoes in to medium size cubes.
Keep the cubes in cold water for a minute and drain. Cook potato
cubes with bit of salt added by boiling it or in the microwave
(without water) for about 5 to 8 minutes. Drain and keep aside.

(Finely) Chop and keep them ready: Onion, green chilies and
coriander leaves.
Method:
-
For Kanda Poha, heat 1 to 2 tablespoons of oil on medium flame.
Add mustard seeds to the oil. Once the mustard seeds starts to
sputter, add cut green chilies, turmeric powder and fry them
lightly. now add curry leaves. Sauté for few more seconds.

Add chopped onion and sauté until the onions are tender and become
translucent.

Add potatoes, sprinkle bit of water, and stir to coat
the potatoes. For about a 30 seconds

Next add the prepared poha and peanuts. Mix it in with the spices
and cook for 2 minutes.
- Do a taste test in between. Add salt if and as needed.

After 2 minutes, turn off the flame and squeeze lemon juice into
the poha. Gently stir.
- Before serving mix-in cut coriander leaves.

Plate kanda poha, serve garnished with sev (or
Chivda) for bit of crunchiness. Enjoy!
NOTE:
- Use thicker variety of the Poha/flattened rice is better than the
very thin variety. Medium thick variety works well too.
- May use more green chilies if you and your family prefers more spicy poha.

Quinoa Bhath/Spicy Upma

Upma is one dish meal. mostly prepared for breakfast and also for packed lunch. As any upma (see the list of variety below) is wholesome healthy meal in itself, making with Quinoa makes it more healthier.
"Quinoa is gluten-free, high in protein and one of the few plant foods that contain all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants." - according to www.healthline.com
Ingredients:
- 1 cup - Quinoa , organic
- 2 - Green Chillies , finely chopped
- 1 - Onion , finely chopped
- 1 - Tomato , finely chopped
- ¼ tsp - Cumin (Jeera) seeds
- ¼ tsp - Mustard seeds
- ¼ tsp - red chili powder
- ½ tsp - Turmeric powder (Haldi)
- ½ tsp - Amchoor /mango powder
- ½ tsp - Garam masala powder
- ½ tsp - Sambar powder (optional)
- ¼ tsp - jaggery or sugar or brown sugar
- ½ cup - Green peas,
- ½ cup - Carrots chopped into cubs
- ¼ cup - Bell pepper chopped into cubs,
- ¼ cup - corn
- 8-10 - Curry leaves
- 1/2 tsp - Ginger , finely grated or chopped
- 1 cup - Coriander (Dhania) Leaves , finely chopped
- 1 lemon - juice as per taste and is optional.
- 1 tbsp - Olive Oil
- 1 tsp - Ghee
- Salt , as per your taste
Method:
- Heat a wide thick bottom fry pan on medium heat, dry roast the Quinoa stirring continuously until nice aroma comes and some of the Quinoa turns golden. Almost like roasted peanuts smell. Yum! This is optional, but I feel the Upma tastes and smells better. May take 4 to 5 minutes.
- Turn off the heat and transfer the Quinoa into a bowl. Add water to it and wash the Quinoa multiple times until the water runs clear. Add water and keep it aside to soak (no need to pre-soak, just until other steps below are followed).
- In the same wide fry pan, add a tablespoon of oil on medium-low heat, once the oil is hot, add green chilies.
- Meanwhile, parallelly in another bowl add 3 cups of water to bring it boil. I usually do this in microwave.
- Once green chilies are slightly roasted add - ginger, cumin & mustard seeds, and curry leaves.
- When the cumin & mustard seeds begin to sizzle, add onions and bit of sugar. Saute until the onions turn translucent.
- Now add chopped tomatoes. cover and cook for a minutes until slightly soft.
- Add the chopped mixed vegetables - peas, carrots, corn and bell pepper.
- Stir in salt for the vegetables, cover the pan and let it cook for a minute or two.
- Open the lid, move all the vegetables to the sides. In the center of the pan, add all the dry ingredients (turmeric pdr, amchoor pdr, garam-masala pdr, red chili pdr, sambar pdr and sugar) and ½ tsp of oil, mix and slightly roast the dry-ingredient for half minute.
- Drain Quinoa and mix in to vegetable and masala mixture. Add salt as per your taste and mix well.
- Now carefully add the boiling water. Mix, cover and let it cook over medium heat for about 5-8 minutes or until Quinoa is done and all the water is absorbed
- Turn off the heat.
- Squeeze the lemon juice over the upma if using and mix.
- Add the ghee and half of the chopped coriander leaves and mix.
- Garnish with rest of the leaves and serve hot with curds, pickle and sev on the side.

During family gathering during a family event, this combination is common for breakfast around South-Canara / Mangalore-Udupi area. Because though it is multiple dishes, it is easy to prepare when there are 30 to 50 family members in the house. Well, when we were young, didn't like it much, would make bit of fuss and demand for regularly breakfast like - variety of dosas, rotti, idle, shavige, Kotte kadubu, panpathali .... list is endless which are all time-consuming dishes. But now, it is nostalgic. I just prepare to get back all the good old memories of family get together. This is also makes great summer picnic food. See the recipes below
Rava uppittu (aka Sajjige in south-canara)
Sihi avalakki (sweet poha) aka Bajil
Khara avalakki (spicy poha)
Chewda (dry savory poha)
In this post, I will focus on Khara Avalakki.
I have two variations of recipe for preparing it.
Khara Avalakki - 1
Ingredients:
- 2 cups - Thin poha /avalakki
- 1 small - Onion, finely chopped
- 1/2 cup - Grated Coconut
- 1 tsp - Sugar or to taste
- Salt as per taste
- 2 tsp - Oil
- 3-4 - Red dry chillies or as per your taste
- 1/2 tsp - Mustard
- 5-8 - Curry Leaves
Method:
- Heat oil in a small pan. Once hot add mustard and curry leaves. Once mustard start splattering, add the red chillies and roast them all.
- Switch off the stove and let it cool.
- Once the mixture is cooled, smash into course powder. You may use mortar and pestle, or transfer the mixture into a clear thick plastic bag and roll over it with belan / rolling-pin.
- In a mixing bowl, add poha, onion, grated coconut, sugar, salt and crushed powder. Mix all together
- Serve at room temperature, along with Rave uppittu.
Khara Avalakki - 2
Ingredients:
- 2 cups - Thin poha / avalakki
- 1/2 cup - Grated Coconut
- 1 tsp - Sambar powder ( or may be substituted with red chilli pdr + cumin pdr + coriander pdr)
- 1/2 tsp - crushed jaggary or brown sugar powder
- Salt as per taste
- 2 tsp - Oil
- 2-3 - Red dry chillies or to taste
- 1/2 tsp - Mustard
- 5-8 - Curry Leaves
Method:
- In a mixing bowl, mix grated coconut, sambar powder, jaggery, and salt
- Now mix-in the poha making sure that the poha is not crushed.
- For seasoning, heat oil in a small pan. Once hot add mustard and curry leaves. Once mustard start splattering, and the red chillies and roast them all.
- Pour seasoning over the poha mixture and mix them all together.
- Serve at room temperature, along with Rave uppittu.

Avalakki Uppittu / Poha Upma

Avalakki uppittu or Poha upma is quick and easy to make. Usually made for breakfast and packed for school lunch (tiffin). To be eaten warm, but with bit of savoury snack like Sev or chips on the side, it can be eaten at room temperature.
Ingredients:
- 2 cups - poha (medium thickness)
- 2 tbsp - peanuts
- 1 medium - tomato - finely chopped
- 1 medium - onion - finely chopped
- 1/2 cup - grated coconut (optional)
- 1/4 tsp - Turmeric
- 3-4 tbsp - oil
- 2-3 - Green chillies - slit cut
- 1/2 tsp - mustard seeds
- 1 tsp - urad dal / black-gram
- 1 tsp - chana dal / bengal-gram
- 4-5 - curry leaves
- 1/2 tsp - sugar
- 2 tbsp - chopped coriander leaves
- Oil - 3 to 4 spoons
- Salt as per taste
Method:
- Rinse and soak poha for about 5 minutes. After rinsing, drain the water completely and set it aside.
- Heat oil in a kadai /pan, add urad dal and chana dal and fry it. Once its color changes lightly, add mustard. Once it splutters, add onion, green chillies, curry leaves and fry well.
- When onion is half cooked, add chopped tomato, salt, sugar and turmeric powder. Stir it all well and cook for about 2 minutes or until tomatoes are cooked
- Now add poha and mix well. If needed, sprinkle bit of water.
- Turn of the stove, add chopped Coriander leaves and grated coconut,
- Mix and serve warm, with Sev or curds.

Rave Uppittu / Rava Upma / Sajjige

Upma in North-India, Uppittu in Karnataka and Sajjige in South canara area .... are some of the common names. This is the basic Upma made out of Semolina and it is a wholesome healthy breakfast.

Ingredients:
- 1 cup - medium rava / sooji / semolina
- 2 cups - water
- 1/4 tsp - turmeric powder
- 1 - Tomato (optional)
- 4-5 tsp - cooking oil
- Salt - as per taste
- Seasoning:
- 1/2 tsp - mustard seeds
- 1 tsp - urad dal
- 1 tsp - bengal gram dal / chana dal
- 1 big - onion (optional)
- 1-2 - green chillies
- 5-6 - curry leaves
- For garnish:
- 2 tbsp - chopped coriander leaves
- 1/2 cup - fresh grated coconut
- 1 tsp - lemon juice (optional)
Method:
- Preparation:
- Soak urad dal and chana dal and keep aside.
- Chop onion, tomatoes and coriander leaves,
- Slit green chillies
- Grate fresh coconut
- Take water and salt in a vessel and bring it to boil under low flame.
- Put kadai (thick bottom pan) on stove and keep the flame at medium low.
- Seasoning:
- Heat oil in the kadai. Put mustard seeds to the hot oil, once mustard seeds splutters, drain both urad dal and chana dal
- Add in slit green chillies, curry leaves, chopped and onion.
- Fry until the onions are soft under medium flame.
- Add 2 cups of rava and continue frying for about 5 more minutes.
- Stir in cut tomatoes and turmeric powder.
- Pour the boiling water to the kadai, little by little, make sure there is no lumps forming. Mix well till it absorbs all the water. Add salt to taste.
- Mix in little more water, close the lid and allow it to cook for 3 to 4 minutes under low flame.
- Garnish with grated coconut, lemon juice ( lemon is optional, not required if you use tomatoes) and chopped coriander leaves and mix well.
- Turn off the stove, cover the lid and let it sit for a minute
- Serve hot with curds / pickle / savory mixture.

Bread Upma

Bread Upma or Bread Upittu is one of the easy and quick breakfast recipe.
Good for lunch box too. Any type of bread maybe used. Even fruit bread turns out good.
Ingredients:
- Bread slices - 5 to 8 slices
- Onion - 1 ( chopped )
- Tomato - 1 ( chopped )
- Green chillies - 3 ( chopped )
- Turmeric powder - 1/4 tsp
- Mustard seeds - 1/4 tsp
- Curry leaves - 3 sprigs
- Butter - 3 tsp for cooking
- Chana dhal / Split Bengal gram - 1/2 tsp
- Urad dhal / Split Black gram - 1/2 tsp
- Coriander leaves - 1 small bunch ( chopped )
- Salt to taste
- Vegetable oil - 2 tsp
- Water - 3 tsp
- Lemon juice - 1 tsp
Method:
- Wash and soak Chana dhal and Urad dhal for half and hour.
- Cut the bread slices into small squares. Heat a pan and add 1 tsp of butter then toast the bread pieces slightly for 2 minutes. Keep aside.
- Chop the onion, green chillies and tomato.
- Heat 2 tsp of oil and splutter mustard seeds.
- Add curry leaves, drained Chana dhal and Urad dhal to the oil. Stir a little.
- Next add green chillies and saute a bit.
- Then add chopped onions, saute on medium heat, until soft and tender.
- Add tomatoes, turmeric powder/
- Stir and cook the tomatoes until they turn lightly soft as well. Sprinkle some water if needed.
- Add the fried bread pieces, salt and mix well, cover with a lid. Cook for 3 minutes in a low flame. Finally sprinkle 1 tsp of lemon juice.
- Garnish with the coriander leaves and serve.

Sabakki /Sago / Sabudana khichdi/upma

Sabudana or Tapioca pearls has good source of protein, which helps with muscle building, healing and strengthening. So vegetarians, turn to sabudana for their daily protein intake. Tapioca is rich in iron and calcium, which helps maintain bone health. Sabudana is good for pre and post pregnancy. Also prepared into baby food once baby is ready solid food.
Sabudana uppma or kheer is a good choice to consume after religious fasting. Just don't add onion.
Ingredients:
- 2 cups of Sabudana
- 1/2 cup of potatoes
- 1/2 cup peanuts
- 1 Onion (Optional)
- 1/4 tsp turmeric/haldi (optional)
- 3-4 curry leaves
- 1/2 tsp of cumin seeds/jeera
- 4-5 green chillies
- 1 tsp sugar
- 3 tsp oil
- Salt to taste
- Juice of a lemon
- Cilantro/Coriander leaves for garnish
Method:
- Wash the sabudana in enough water twice or thrice and drain the water. Now soak it in a flat bottom container. I soak it for at least 4-5 hours or I soak it over-night for morning breakfast.
- Drain the sabudana in a colander/strainer and keep aside the colander with sabudana for it to completely drain the water.
- Take a pan and dry roast the peanuts till evenly brown, then remove the skin and pulse them into a coarse powder. Keep aside. HINT: As I feel this is the most time consuming part of this dish, I make a bigger batch of Peanut coarse powder and store it in a air tight container. May be stored in freezer too.
- Peel the potato and chop them into small pieces and boil it separately. I usually, cook the potato cubes with salt in Microwave for about 5 to 8 minutes.
- Heat a pan and add oil in it. Add the cumin seeds, curry leaves, and chopped/slit green chillies. [Optional: Add chopped onion and suate until onion is translucent.] Add the cooked potatoes. Sprinkle some salt and stir until the potatoes get crisp on the outside.
- Stir in turmeric powder. This is optional, but I like little bit of it in my uppma.
- Now add the sabudana to this and toss well on medium flame. Cover with lid for a minute.
- Note: If you feel that the sabudana has become very dry then you can sprinkle some water and mix.
- The sabudana will become translucent when they are done. After the sabudana is cooked completely, add the coarse peanuts and lemon juice.
- Toss to mix and switch off the heat. Garnish with the finely chopped cilantro leaves.
