Kanda Batata Poha - Seasoned Beaten Rice with Potato

Kanda Poha is a common dish from the heart of Maharashtra. I got this recipe
from one of my Maharashtrian friend. My friend told me a funny fact, that when boys
family visit potential girl's house (arranged marriage), the boys family
looks for how well the girl can make Kanda Poha. I am not sure how
true is the fact, but I am sure she was trying to emphasis how important this
dish is.
Ingredients:
- 2 cup - Poha (Flattened rice)(150 grams)
- 2 - Potatoes, peeled and diced
- 1 - Green Chilli (finely chopped) (or as per taste)
- ½ cup - Peanuts
- 2 tsp - Fresh Lemon Juice (or as per taste)
- 8 to10 - Curry Leaves
- 1½ tsp - Sugar
- ¼ tsp - Turmeric Powder
- ½ tsp - Black Mustard seeds
- ¼ tsp - Cumin seeds
- ¾ tsp - Salt (or as per taste)
- 1 - 2 tbsp. - Oil
- ¼ cup - Fresh Coriander/cilantro Leaves (finely chopped)
- Besan Sev for garnish
Prep:

Poha: Clean the poha of husks and other impurities; To wash it,
pour the poha it in a bowl of cold water, immerse it completely
and drain it out immediately. You may use a strainer to
drain the water out; Gently spread out the poha with a help of a
spoon. Gently mix-in ¾ teaspoon of salt and 1½ tsp of sugar.
Keep the poha aside for about 15 minutes for it to soften. If it
is too dry, sprinkle bit of water for it soak and swell.

Peanuts: Heat a pan. Put 1tsp of oil in it. When the oil is hot,
add peanuts and roast until the color changes and skin starts to
come off. Transfer the peanuts onto a kitchen towel. Fold over the
towel, rub the peanuts in remove the skin. Discard the skin. Keep
the roasted peanuts aside.
Removing the peanut skin is optional step.

Potatoes: Peal the skin and cut potatoes in to medium size cubes.
Keep the cubes in cold water for a minute and drain. Cook potato
cubes with bit of salt added by boiling it or in the microwave
(without water) for about 5 to 8 minutes. Drain and keep aside.

(Finely) Chop and keep them ready: Onion, green chilies and
coriander leaves.
Method:

For Kanda Poha, heat 1 to 2 tablespoons of oil on medium flame.
Add mustard seeds to the oil. Once the mustard seeds starts to
sputter, add cut green chilies, turmeric powder and fry them
lightly. now add curry leaves. Sauté for few more seconds.

Add chopped onion and sauté until the onions are tender and become
translucent.

Add potatoes, sprinkle bit of water, and stir to coat
the potatoes. For about a 30 seconds

Next add the prepared poha and peanuts. Mix it in with the spices
and cook for 2 minutes.
- Do a taste test in between. Add salt if and as needed.

After 2 minutes, turn off the flame and squeeze lemon juice into
the poha. Gently stir.
- Before serving mix-in cut coriander leaves.

Plate kanda poha, serve garnished with sev (or
Chivda) for bit of crunchiness. Enjoy!
NOTE:
- Use thicker variety of the Poha/flattened rice is better than the
very thin variety. Medium thick variety works well too.
- May use more green chilies if you and your family prefers more spicy poha.

Avalakki Dosa / Poha Dosa

This is one of my mom's recipe. Good with coconut & red chilli chutney or dry coconut & garlic chutney powder.
Ingredients:
- 2 cups - Rice
- 3 cups - thin Poha / avalakki/ flatten rice
- 1 cup - grated coconut
- 1 tbsp - Methi/ Fenugreek seeds
- Salt – as per taste.
Method:
- Preparation:
- Soak Rice and Methi together for at least 2 hours.
- Wash Poha and drain.
- Grind Rice, Methi, Poha and grated coconut all together to fine batter.
- Let the batter ferment overnight. (for around 7 hours)
- For fluffy dosa add pinch of cooking soda and mix. this is optional.
- Add salt to the batter after fermentation.
- For making Poha dosa:
- Apply oil on hot dosa tava/griddle
- Scoop out a big spoon of batter over the griddle and spread the batter in circles.
- Cover and let it cook for couple of minutes or until the bottom turns crisp and golden.
- For this dosa, only one side is cooked, no need to turn it over. Keep the griddle hot on medium heat setting.
- Repeat these steps to make more dosa.
- Serve hot dosa with fresh coconut chutney or chutney powder

During family gathering during a family event, this combination is common for breakfast around South-Canara / Mangalore-Udupi area. Because though it is multiple dishes, it is easy to prepare when there are 30 to 50 family members in the house. Well, when we were young, didn't like it much, would make bit of fuss and demand for regularly breakfast like - variety of dosas, rotti, idle, shavige, Kotte kadubu, panpathali .... list is endless which are all time-consuming dishes. But now, it is nostalgic. I just prepare to get back all the good old memories of family get together. This is also makes great summer picnic food. See the recipes below
Rava uppittu (aka Sajjige in south-canara)
Sihi avalakki (sweet poha) aka Bajil
Khara avalakki (spicy poha)
Chewda (dry savory poha)
In this post, I will focus on Khara Avalakki.
I have two variations of recipe for preparing it.
Khara Avalakki - 1
Ingredients:
- 2 cups - Thin poha /avalakki
- 1 small - Onion, finely chopped
- 1/2 cup - Grated Coconut
- 1 tsp - Sugar or to taste
- Salt as per taste
- 2 tsp - Oil
- 3-4 - Red dry chillies or as per your taste
- 1/2 tsp - Mustard
- 5-8 - Curry Leaves
Method:
- Heat oil in a small pan. Once hot add mustard and curry leaves. Once mustard start splattering, add the red chillies and roast them all.
- Switch off the stove and let it cool.
- Once the mixture is cooled, smash into course powder. You may use mortar and pestle, or transfer the mixture into a clear thick plastic bag and roll over it with belan / rolling-pin.
- In a mixing bowl, add poha, onion, grated coconut, sugar, salt and crushed powder. Mix all together
- Serve at room temperature, along with Rave uppittu.
Khara Avalakki - 2
Ingredients:
- 2 cups - Thin poha / avalakki
- 1/2 cup - Grated Coconut
- 1 tsp - Sambar powder ( or may be substituted with red chilli pdr + cumin pdr + coriander pdr)
- 1/2 tsp - crushed jaggary or brown sugar powder
- Salt as per taste
- 2 tsp - Oil
- 2-3 - Red dry chillies or to taste
- 1/2 tsp - Mustard
- 5-8 - Curry Leaves
Method:
- In a mixing bowl, mix grated coconut, sambar powder, jaggery, and salt
- Now mix-in the poha making sure that the poha is not crushed.
- For seasoning, heat oil in a small pan. Once hot add mustard and curry leaves. Once mustard start splattering, and the red chillies and roast them all.
- Pour seasoning over the poha mixture and mix them all together.
- Serve at room temperature, along with Rave uppittu.

Avalakki Uppittu / Poha Upma

Avalakki uppittu or Poha upma is quick and easy to make. Usually made for breakfast and packed for school lunch (tiffin). To be eaten warm, but with bit of savoury snack like Sev or chips on the side, it can be eaten at room temperature.
Ingredients:
- 2 cups - poha (medium thickness)
- 2 tbsp - peanuts
- 1 medium - tomato - finely chopped
- 1 medium - onion - finely chopped
- 1/2 cup - grated coconut (optional)
- 1/4 tsp - Turmeric
- 3-4 tbsp - oil
- 2-3 - Green chillies - slit cut
- 1/2 tsp - mustard seeds
- 1 tsp - urad dal / black-gram
- 1 tsp - chana dal / bengal-gram
- 4-5 - curry leaves
- 1/2 tsp - sugar
- 2 tbsp - chopped coriander leaves
- Oil - 3 to 4 spoons
- Salt as per taste
Method:
- Rinse and soak poha for about 5 minutes. After rinsing, drain the water completely and set it aside.
- Heat oil in a kadai /pan, add urad dal and chana dal and fry it. Once its color changes lightly, add mustard. Once it splutters, add onion, green chillies, curry leaves and fry well.
- When onion is half cooked, add chopped tomato, salt, sugar and turmeric powder. Stir it all well and cook for about 2 minutes or until tomatoes are cooked
- Now add poha and mix well. If needed, sprinkle bit of water.
- Turn of the stove, add chopped Coriander leaves and grated coconut,
- Mix and serve warm, with Sev or curds.
Other Upma Variety: Rava upma, Sago upma, Bread upma, Avalakki upma, Shavige upma, String Hopper (Indian Rice Noodles) Upma, Millet (Siridhania) upma, Wheat/Godi kadi upma, Oats upma, Quinoa upma, Buckwheat upma, Amarnath seeds upma the list goes on.

~ HAPPY KRISHNA JANMASHTAMI ~
Poha is Krishna's favorite. Various dishes made with Poha has main ingredient is offered as naivedhya (an offering to God). Pancha Kajjaya is a speciality of Dakshina Kannada and Udupi districts of Karnataka. This naivedhya is a must for Gana Homa i.e. Ganesha Pooja. This panchakajjaya is prepared as prasadha or an offering in Tulsi pooja also. Sugarcane pcs. are required to be added in this panchakajjaya for Tulsi Pooja. Pancha means five and Kajjaya means sweets, a naivedhya which is prepared with five main ingredients. Beaten Rice, Coconut, Jaggery, Black Sesame seed and ghee are most important one and rest are optional. Since some of the ingredients (like sugar cane pieces and black sesame seeds) are hard to find here, they are missing in the picture. A very easy to make recipe…
Other related recipe Avalakki Chewda
Ingredients:
Paper Beaten Rice / Poha/ Avallakki / – 2 cups.
Coconut – ½ cup
Jaggery / Bella – ½ cup.
Black Sesame seed / Yellu – 1 tsp.
Ghee / Thupa / Purified butter – ½ tsp.
Cardamom /Elaichi powder– ½ tsp.
Puffed paddy /Aralu/ Podhol / Rajgira – ½ cup. Or powder form of the puffed paddy(optional)
Sugar cane / Kabbu pieces. – handful. (optional)
Method:
1. Clean and sieve beaten rice well so that any powder or dust is removed.
2. Clean and roast black sesame seed till you get a nice aroma.
3. Powder cardamom, grate coconut and Jaggery.
4. Take a deep vessel; add coconut, Jaggery, cardamom, ghee and mix well until soft mixture is formed.
5. Add Puffed paddy and mix.
6. Add poha/beaten rice and mix well till all beaten rice are well mixed with Jaggery and coconut.
7. Add sugar cane pieces. and mix again.
The offering is ready.
Things to be taken care:
Can increase the quantity of coconut, it gives further smooth texture to beaten rice.
Always use black sesame seeds for extra aroma and flavor.
Either or both sugarcane or puffed paddy powder can be excluded.
This can be kept for 3-4 days in fridge.

Microwaved Poha | Avalakki Chivda - Happy Janmastami

~ HAPPY KRISHNA JANMASHTAMI ~
Butter and Poha(
rice flakes) are Krishna's favorite. During Janmashtami my mom used to make various dishes with Poha - Sweet poha, Khara (spicy) poha, Chivda, Poha ladoo and so on...
Here is a simple recipe for making "
Chivda" -
a savory snack made out of rice flakes.
To make chewda you need..:
Thin Poha (Rice flakes) : 3 cups
Peanuts - ½ cup ( you can use cashews instead)
Chickpeas – ¼ cup (optional)
Dry red chillies – 4
Dry coconut flakes – ½ cup
Turmeric powder – 1 tsp.
Powdered sugar – ½ tsp (optional)
Red Chilli powder – 1 tsp. or to taste
Salt to taste
Oil
Curry leaves – 7 to 8 leaves
Method:
1. In a microwaveable plate spread ½ of the poha and microwave for 2 minutes on high. Stir the poha and microwave again for about 3 minutes or till it looks slightly puffed and crispy. The time required to roast poha depends on each microwave. First time you want to watch and note down the time. Be careful not to burn the powa. Remove the poha and keep aside.
Repeat the process with the other ½ of the portion. Keep aside along with first batch.
(If you don’t have microwave – dry roast the poha in a pan over medium high until poha is crisp.)
2. In a pan heat 2 spoons of oil. Add curry leaves and red chillies. Stir both for a minute.
3. Add peanuts and chickpeas. Stir until peanuts are roasted.
4. Add coconut flakes. Stir it for a minute. Don’t let it burn.
5. To the mixture, stir-in the Turmeric powder.
6. Reduce the heat. Add roasted poha and mix all together.
7. Sprinkle salt, red chilli powder and sugar. Mix all together.
8. Remove from the fire and let it cool completely before storing it in a air tight container.
Enjoy this low-fat snack!
