Aloo Paratha (Stuffed version) - Potato Bread

There are two ways I make Aloo (Potato) Paratha. (1) by mixing the flour with aloo bhaji | sabzi and (2) 'stuffed aloo paratha'- by stuffing the aloo bhaji in the dough. This post is on the second method - stuffed version.  Both turns out delicious. Difference would be (1) the bhaji for the stuffed version should be thick, if it is watery, it makes it harder to stuff and roll. (2) to add little maida (all purpose flour). maida will make the dough more stretchy and won't ripe while rolling - which may happen if only wheat flour is used. I make the same bhaji for both, just repeating it in this post as well for convenience.

Ingredients for Aloo Bhaji:
  • 1 cup - potato - boiled & mashed
  • ½ cup - onion -cut lengthwise
  • 3 - green chilies -finely chopped
  • 1 tsp - cumin seeds
  • 1 tsp - ginger minced
  • ½ tsp - turmeric powder
  • ½ tsp - lime juice
  • ¼ cup - fresh coriander leaves - chopped
  • 2 tbsp - oil
  • salt to taste
Method to make Aloo Bhaji:
  1. In a pan|kadai|wok, heat oil. Once oil is hot, add cumin seeds, cut green chilies and ginger. Saute for few seconds.
  2. Add cut onions, fry until onion become soft & translucent.
  3. Add turmeric powder and stir.
  4. Now, add boiled and mashed potatoes. salt, and ¾ cup of water. 
  5. Stir and cover the pan, simmer for 5-6 minutes on a medium-low flame.
  6. Once the bhaji becomes thick, add coriander leaves and lime juice, mix. 
  7. Turn off the flame. Aloo bhaji is ready. Keep aside and let it cool down to be used in aloo paratha dough.

Ingredients for Aloo Paratha:
  • 1 cup - aloo bhaji
  • 1 cup - all purpose flour | maida
  • 1½ cup - wheat flour
  • 3 tsp - oil
  • 5 tsp - oil | melted butter | ghee - needed while cooking the paratha
  • ¼ cup - wheat flour  - needed while rolling the paratha
  • salt to taste
Method to make Aloo Paratha:
  1. In a mixing bowl, take all-purpose-flour, wheat flour and salt
  2. Add 1 cup of water, mix it to form a firm dough. you may need more water to get right consistency. 
  3. Once all the dough comes together, add 3 tsp of oil and knead. Will need extra kneading to make the dough stretchy.
  4. Cover with moist paper towel or cling-warp and keep it aside for about 15 to 20 minutes. 
  5. Knead the dough few more times. Divide the dough and form into big-lemon sized balls.
  6. Roll one of the ball to about 4 inch diameter circle.
  7. Place about 1 tbsp of aloo bhaji on the center of the rolled dough. Now bring all the edges together and seal to form a ball. Keep aside.
  8. Repeat the steps with rest of the dough.
  9. Heat a flat pan/griddle on medium-low flame.
  10. On a lightly floured surface, gently roll the stuffed-dough ball,  to say about  5" diameter circles. Careful not to tear the paratha. The technique is to roll evenly from center towards the edge, best idea is to flip the paratha and roll; and again flip and repeat. This why the outer layer of the dough is evenly stretched. Note, the paratha will be thick as it has stuffing.  
  11. Once the griddle is hot, place the rolled paratha on the griddle. As bottom side gets slightly hot flip it over. Brush bit of oil/ghee/melted-butter on the paratha. With help of flat spatula, gently press the middle area of the paratha and rotate it in circular motion - this help it cook evenly. Flip the paratha again and brush oil/ghee/melted-butter now on the top side. You may need to flip couple of more times to cook evenly on both sides, no need to apply oil again. Cook until you notice brown spots on the paratha.
  12. Repeat the steps with rest of the stuffed dough balls.
  13. Serve hot aloo paratha with leftover aloo bhaji, plain curds or raita and Indian pickle.

Aloo Paratha / Aloo Roti / Indian Potato Bread

Both turns out yummy and disappears from the table in no time. In this post, lets look at the steps how to make aloo paratha by mixing the flour with aloo bhaji. Aloo Paratha is good for kids lunch box, roll aloo paratha into tube and wrap it in aluminium foil, also give ketchup or jam on the side for dipping.

Ingredients for Aloo Bhaji:
  • 1 cup - potato - boiled & mashed
  • ½ cup - onion -cut lengthwise
  • 3 - green chilies -finely chopped
  • 1 tsp - cumin seeds
  • 1 tsp - ginger minced
  • ½ tsp - turmeric powder
  • ½ tsp - lime juice
  • ¼ cup - fresh coriander leaves - chopped
  • 2 tbsp - oil
  • salt to taste
Method to make Aloo Bhaji:

  2. Add wheat flour and bit of salt (remember aloo bhaji already has salt in it). Mix it to form a firm dough.  Depending on the consistency, you may need extra water or more wheat flour. 
  3. Once all the dough comes together, add 2 tsp of oil and knead.
  4. Cover and keep it aside for about 10 minutes. 
  5. Divide the dough and form into medium sized balls.
  6. Meanwhile, heat a flat pan/griddle on medium-high flame.
  7. On a lightly floured surface, roll the dough - say about  5" diameter circles.
  8. Once the griddle is hot, place the rolled paratha on the griddle. As bottom side gets slightly hot flip it over. Brush bit of oil/ghee/melted-butter on the paratha. Methi Roti ( Chapati | Paratha) | Fenugreek leaves Roti

Methi | Fenugreek leaves have many health benefits. I try to bring fresh bunch of leaves when available in Indian grocery store. I freeze the extra leaves after cleaning for future use. Methi is bitter and sometimes the dish prepared with it also turns out slightly bitter and to be careful of. There are few dishes I prepare with methi leaves, like, methi paratha, aloo methi, malai methi matar, methi rice etc., But when used in paratha, the flavor is such that you want to eat more. It actually tastes delicious. Can be eaten just with curds and pickle. Methi paratha is similar to Gujarati Thepla, which is made with multigrain flour -mainly wheat and besan flour. Note: separate the leaves from the stem, only leaves are used.

Ingredients:
  • 1 cup - methi leaves | fenugreek leaves
  • 2 cups - wheat flour
  • ¼ cup - curds or Greek yogurt
  • ¼ cup - fresh coriander leaves
  • ½ tsp - cumin seeds
  • ½ tsp - carom seeds | ajwain
  • ½ tsp - turmeric powder
  • 1 tsp - ginger minced
  • 1 tsp - minced garlic (optional)
  • ½ tsp - red chili powder 
  • 2 tsp - oil
  • 5 tsp - oil | melted butter | ghee - for cooking
  • ¼ cup - wheat flour  - needed while rolling the paratha
  • salt to taste
Method:
  1. In a mixing bowl, take methi leaves & coriander leaves, curds, cumin seeds, carom seeds, turmeric powder, ginger, red chili powder and salt. Mix it all together.
  2. Gradually now add wheat flour while mixing it all together. Start kneading the dough. You may need to add bit of water to get the chapati dough consistence. 
  3. Once all the ingredients comes together into the dough, add 2 tsp of oil and knead.
  4. Cover with moist paper towel and keep it aside for about 20 to 30 minutes. 
  5. Divide the dough and form into medium sized balls.
  6. Meanwhile, heat a flat pan/griddle on medium-high flame.
  7. On a lightly floured surface, roll the dough - say about  5" diameter circles.
  8. Once the griddle is hot, place the rolled paratha on the griddle. As bottom side gets slightly hot flip it over. Brush bit of oil/ghee/melted-butter on the paratha. Chana Bhatura | Chole Bhatura

Chole Bhatura or Chana Bhatura is one of the common dish in North India, especially in Punjabi house hold. One will definitely find it in North Indian restaurant menu. It is one of the famous combo, though one may have bhatura with other curry; or have chole with rice, chapati, roti or poori. The recipes are kinda my way of doing the way I like it. For Chana/Chole, I take the shortest and simplest route of making it in pressure cooker with ready chana masala powder and canned Garbanzo beans (chana) and at times canned tomatoes. Anyway, I make it when I have ran out of things in refrigerator and I have to visit my pantry for emergency supply - which happens rarely. I am going to mention both recipes here, but note that it is NOT the authentic way of preparing the dish. That said, it still turns out delicious in its own way, so give it a try. 

BHATURA

Ingredients for Bhatura
  • 4 cups - whole wheat flour (gheu ka atta)
  • ½ cup - semolina (sooji/rava)
  • ½ tsp - Eno fruit salt 
  • ½ tsp - sugar
  • ½ tsp - turmeric powder
  • 1 tsp - cumin seeds
  • 2 tbsp - fresh coriander leaves -finely chopped
  • 2 tbsp - fresh methi (fenugreek) leaves -finely chopped (optional)
  • 2 tbsp - curds | plain yogurt
  • Salt – to taste
  • Warm water – ¾ cup
  • Oil – 1 tablespoons + more for deep frying
Method for preparing Bhatura:
  1. In a mixing bowl take -wheat flour, semolina, salt, sugar,  Eno fruit salt, cumin seeds, and turmeric powder. Slightly mix them all.
  2. Now add plain yogurt, chopped coriander and methi leaves. Mix all together. 
  3. Start adding little water at a time and knead the dough. Keep adding and keep kneading the dough. Dough should be firm.
  4. Finally, add 1 tablespoon of oil or ghee and give a quick knead. Cover with wet towel and keep it aside at least for half an hour to an hour, this brings unique flavor and texture to the bhatura. 
  5. You may notice that the dough would have fluffed up a bit and feels soft due to the soda we added. Divide the dough equally and make medium sized balls. 
  6. Meanwhile, take oil in a fry-pan, place it on the stove and heat it on medium-high flame.
  7. Lightly flour rolling surface, place the dough ball and smoothly roll it. Dust some more flour over the rolled dough, flip it over, dust some flour again on the other side and roll again. Since the dough is on the softer and fluffier side, it is hard to get a perfect circle - that's case at least for me. Also, it will be bit thicker than the roti/chapati. That is normal, if you try to roll any thinner you may end up tearing it.
  8. Now slowly slide the rolled bhatura into hot oil [ to check if the temperature of the oil is right, drop a small piece of dough in to the oil and it should float immediately to the top ]
  9. After  few seconds, the bhatura will float, with the help of a slotted spatula gently press it down, this will help bhatura to swell, now turn the bhatura and fry it on both sides. 

  10. Once bhatura is slightly golden brown, remove the bhatura out on to a plate lined with paper towel to absorb extra oil.
  11. Repeat the steps with rest of the dough.
  12. Serve hot with Chole or any other curry. 

CHOLE | CHANA

Ingredients for Chole:
  • 1 can - chana |chickpeas | Garbanzo (or 1 cup - Soak overnight and pressure cook for 10 - 15 minutes)
  • 4 - onion (medium) - chopped
  • 2 - tomato (large) - chopped ( or 1 can)
  • 10 - garlic cloves
  • 2" - ginger - chopped
  • 1 of each - bay leaves, black cardamom, green cardamom,cinnamon
  • ½ tsp - cumin seeds
  • ½ tsp - turmeric powder
  • 1 ½ tsp - red chili powder
  • ½ tsp - cumin powder
  • 1 tsp - coriander powder
  • ½ tsp - garam masala powder
  • 1 tsp - Chole masala(any brand)
  • ½ cup - coriander leaves chopped
  • 5 tbsp - oil for cooking
  • Salt as per taste
Method to prepare Chole:
  1. With little water, grind ginger, garlic and onion, 
  2. Heat oil or ghee in pressure cooker pan, when it is hot, add bay leaves, black cardamom, green cardamom,cinnamon and cumin seeds. Saute a bit
  3. Turn the flame to medium and add the ground ginger, garlic and onion paste. Stir the mixture and let it cook - for about 3 to 5 minutes until the raw smell is gone.
  4. Meanwhile in the same grinding jar, add cut tomatoes and grind it into smooth paste. 
  5. Once the ginger, garlic and onion is cooked, add turmeric and red chili powder. Stir for 30 seconds
  6. Now add the ground tomato paste, stir, cover and cook for about 3 to 4 minutes. 
  7. Next add (drained and washed) chana, cumin powder, coriander powder, chole masala and salt, mix it all together. 
  8. Add 1 ½ cup water. stir and close the pressure cooker lid and cook for about 5 whistles on low-medium flame. [number of whistles may differ for different pressure cooker model]
  9. Turn off the flame and let the pressure release on its own.
  10. Add coriander leaves and mix
  11. Chole is ready, serve it hot with cut onion and lime wedges.  Goes well with jeera rice, poori or paratha or of course bhatura.
  12. Enjoy the yummy Chole masala with your family and friends.

Ubbu Roti / Ukkarisida Akki Roti

Ubbu roti is basically rice-flour roti. popular in Malnad / Karnataka and Maharastra. Made for breakfast. Ubbu roti goes well with Eggplant curry, especially Badanekayi Ennegayi  or even Mangalore style chicken curry.
Ingredients:
  • 1 cup rice flour
  • 1&1/2 cup water 
  • Salt as per your taste
  • 1/2 tsp cooking oil
Method:
  1. In a wide kadai / pan  , boil the water along with a tbsp oil and salt to taste.
  2. When water starts bubbling, lower the flame, start adding the rice flour as you mix. Switch off the stove. With a wooden spatula, keep mixing to blend the dough together.

  3. Once the dough is warm, apply bit of oil on your palm and knead it very well
  4. Once you are done with the kneading, pinch and take big lemon sized dough. Again knead the dough using palms and make a soft flat ball.
  5. Put the tava/ flat-griddle on stove and let start heating up at medium-low flame.
  6. Dust the rolling flat and roll the flat balls into thin roti. 
  7. Transfer the rolled roti over the hot tava. 
  8. Once you start seeing the small bubbles, flip the roti and cook on the other side. 
  9. No need to add oil .You can press edges lightly with a soft dry cloth so that roti inflates.This also ensures equal cooking. The roti will fluff up like a poori. 
  10. Once ready, transfer the roti to a hot-box.  
  11. Repeat the steps 4 through 10 with rest of the dough.
  12. Serve hot with chutney or spicy curry. The best side-dish or what we call combo is Eggplant/ brinjal curry/ Badanekayi Ennegayi 
Note: You can not make the dough and keep. The dough needs to roll into roti when it is still warm. And need to cooked immediately after rolling. You can start rolling the other roti while cooking the previous one.

Avalakki Dosa / Poha Dosa

This is one of my mom's recipe. Good with coconut & red chilli chutney or dry coconut & garlic chutney powder.

Ingredients:
  • 2 cups - Rice
  • 3 cups - thin Poha / avalakki/ flatten rice 
  • 1 cup - grated coconut
  • 1 tbsp - Methi/ Fenugreek seeds
  • Salt – as per taste.
Method:
  1. Preparation:
    1. Soak Rice and Methi together for at least 2 hours.
    2. Wash Poha and drain.
    3. Grind Rice, Methi, Poha and grated coconut all together to fine batter.
    4. Let the batter ferment overnight. (for around 7 hours)
    5. For fluffy dosa add pinch of cooking soda and mix. this is optional.
    6. Add salt to the batter after fermentation.
  2. For making Poha dosa:
    1. Apply oil on hot dosa tava/griddle
    2. Scoop out a big spoon of batter over the griddle and spread the batter in circles.
    3. Cover and let it cook for couple of minutes or until the bottom turns crisp and golden.
    4. For this dosa, only one side is cooked, no need to turn it over. Keep the griddle hot on medium heat setting.
    5. Repeat these steps to make more dosa.
  3. Serve hot dosa with fresh coconut chutney or chutney powder

Mangalore Buns

 Mangalore Buns are one of my favorite evening snacks my mom used to make. These are not baked but deep fried instead. They are fluffy sweet pooris(puris).  There are prepared as breakfast dish or evening snacks. This is one of the snack you could make when you have really ripe bananas at home which no one wants to eat. In my case, I will let the banana ripe to make this dish.

Ingredients:
  • 1/2 kg maida/all purpose flour/plain flour
  • 2  ripe  bananas (fully ripe soft banana's are the best to use)
  • 5 tbsp  sugar
  • Pinch of salt 
  • 1/2 teaspoon of baking powder (or Eno Fruit Salt - unflavored one) some use baking soda too.
  • 2 tbsp curds
  • 2 tsp cumin(Geera) seeds
  • Oil for deep frying
  • Extra flour for dusting
Method:
  1. Peel and slice the bananas. Add them into a mixer/blender along with salt and sugar. Blend them into a fine paste. You may mash all these in a bowl using your hands.
  2. Transfer the banana paste into a mixing bowl, mix-in the curds, and baking powder.
  3. Heat 1 tbsp dalda/vanaspati or ghee or cooking oil in a tempering pan and keep it aside.
  4. Add maida/plain flour to the mixture in the bowl little by little and knead it into a soft dough. When you have a sticky dough, add in the melted dalda and knead well.
  5. Add in more flour if needed to make a nice dough that doesn't stick to your fingers completely. But we don't need a hard dough. We need a wet, soft, sticky, rubbery dough. (softer than chapathi dough). Note: Do not add any water while kneading the dough. Sugar when mixed with banana and curds gives out enough water to knead this dough. If needed add more curds or buttermilk.
  6. Spread bit of oil over the dough to keep it moist and prevents drying of the outer layer of the dough.
  7. Wet a thin cloth or paper-towel, squeeze out all the excess water, cover the dough completely with this damp cloth and allow it to rest at room temperature for 7-8 hours. The wet cloth helps retain moisture during rising of the dough. Make sure the cloth isn't too wet and is just damp enough.
  8. After at least 6 hours, lightly knead the dough before you role them out. Make tiny lemon sized balls of the dough, roll it out a little using flour to dust. Don't flatten the balls too much, keep them thick. This dough does not roll into round shapes so I use one of my glass bowls to press it into all even round shapes. You may use a cookie cutter too.
  9. Heat oil for deep frying, test if the oil is rolling hot by dropping a small piece of dough. If the dough emerges on top of the oil, that means the oil is hot enough. Lower the flame to medium heat.
  10. Dust excess flour off the rolled pooris and fry them one at a time on medium flame. As soon as you drop the pooris into the oil they puff up beautifully, flip them over, keep them pressed under the oil for few seconds, that helps the puri puff up more.
  11. Once they are cooked on both the sides and are golden brown, remove the poori from the hot oil and place it in a bowl lined with paper towel to drain out extra oil.
  12. Mangalore Buns will last for few days in air tight container. Difference between regular poori and Mangalore Buns is soft fluff inside which resembles a bread -see picture below.

Khara (Spicy) Mangalore Buns

Mangalore Buns are one of my favorite evening snacks my mom used to make. It is prepared as breakfast dish too. They are fluffy sweet pooris(puris). But when it comes to pooris, my hubby does not like it sweet, so here is my version of spicy and savory Mangalore Buns.

For the original Mangalore Buns recipe, add more sugar (5 tbsp or to taste) and skip - chilli pdr, turmeric and coriander leaves. Here is post for Mangalore Buns recipe.


Ingredients:
  • 1/2 kg maida/all purpose flour/plain flour
  • 2  ripe  bananas (fully ripe soft banana's are the best to use)
  • 1 tsp  sugar
  • Salt to taste
  • 1/2 teaspoon of baking powder (or Eno Fruit Salt - unflavored one) some use baking soda too.
  • 2 tbsp curds
  • 2 tsp cumin(Geera) seeds
  • 2 tsp red chilli pdr
  • 1/2 tsp turmeric(Haldi) pdr
  • 1 handful of chopped coriander/cilantro   
  • Oil for deep frying
  • Extra flour for dusting

Method:
  1. Peel and slice the bananas. Add them into a mixer/blender along with salt and sugar. Blend them into a fine paste. You may mash all these in a bowl using your hands.
  2. Transfer the ground banana paste into a mixing bowl, add in the curds, turmeric pdr, chilli pdr, cumin seeds, chopped coriander leaves and  baking powder and mix well. [Optional: ginger/garlic paste or Garam-Masala or one of your other masala may be added too]
  3. Heat 1 tbsp dalda/vanaspati or ghee or cooking oil in a tempering pan and keep it aside.
  4. Add maida/plain flour to the mixture in the bowl little by little and knead it into a soft dough. When you have a sticky dough, add in the melted dalda and knead well.
  5. Add in more flour if needed to make a nice dough that doesn't stick to your fingers completely. But we don't need a hard dough. We need a wet, soft, sticky, rubbery dough.   8. After at least 6 hours, lightly knead the dough before you make buns. Make tiny lemon sized balls of the dough, roll it out a little using flour to dust. Don't flatten the balls too much, keep them thick. This dough does not roll into round shapes so I use one of my glass bowls to press it into all even round shapes. You may use a cookie cutter too.
  9. Heat up oil for deep frying, test if the oil is rolling hot by dropping a small piece of dough. If the dough emerges on top of the oil, that means the oil's hot enough. Lower the flame to medium heat. If the oil's not heated up yet, wait for another 3-4 minutes.
  10. Dust excess flour off the rolled pooris and fry them one by one on medium flame. As soon as you drop the pooris into the oil they puff up beautifully, flip them over, keep them pressed under the oil for few seconds, that helps the puri puff up more.
  11. Once they are cooked on both the sides and are golden brown, remove the poori from the hot oil and place it in a bowl lined with paper towel.

Rava (Sujji/Semolina) Roti / Sajjige Roti

Rava Roti with Sweet Mango Pickle
Rava Roti is also known as Sajjige Roti in and around Mangalore side.


Ingredients:
4 cup Upit/Upma/Wheat Rava (Sujji/Semolina)
1 cup grated coconut
1 green chilli (finely chopped)
1 cup Onion (finely chopped)
1 cup Fresh Coriander
½ cup curds
1 tsp sugar

Salt

Method:
1. Mix all the ingredients in a bowl and add water until everything is immersed. Mix and keep it aside for 15 minutes.
2. Rava will soak and the batter thickens. If needed add more water so that the batter is easy to handle.
Cooking Rawa Roti:
3. Apply oil on hot tava/griddle
4. Scoop out a big spoon of batter over the griddle and spread.(See picture below)
5. Cover and let it cook for couple of minutes or until the underside is cooked and golden.
6. Turn it over and cook for couple of minutes more
7. Repeat step 3 to 6 to make more Rotis
Serve hot Roti with coriander/coconut Chetney or Sweet Mango Pickle
